Not only do they add flavor, color, texture, and appeal to dishes like Chili-Rubbed Salmon with Cilantro-California Avocado Salsa, they contribute to the dish’s positive nutritional profile.

  • One-fifth of a medium avocado (a 1-oz. serving) contains 50 calories and contributes nearly 20 vitamins, minerals, and phytonutrients to the diet
  • Avocados provide "good" fats: 3 g of mono and 0.5 g polyunsaturated fat per 1 oz. serving
  • Avocados are naturally sodium and cholesterol free

 

Fresh avocado menu mentions grew 75.9 percent between 2005 and 2009, and research shows that 62 percent of foodservice customers are more likely to order a dish containing avocados.
