The team from Chicago-based Mercadito Hospitality has announced the expansion of Mercadito to the Las Vegas market. Building on the popular and renowned Mercadito flagship concept, the group is poised for continued success introducing their signature concept to a new market at the highly acclaimed Red Rock Casino Resort & Spa.

In summer 2014, the group will introduce Mercadito Red Rock, heating up the dining options at the resort, which is located on 70 acres close to the majestic Red Rock mountains in Summerlin, approximately 10 miles west of the Las Vegas Strip. Mercadito Red Rock will join Red Rock Resort's line-up of restaurants. Mercadito Red Rock will be located at 11011 West Charleston Blvd. in Las Vegas.

Featuring the creative Mexican cuisine for which the concept has become known, the location will span 5,500 square feet and will seat around 100 in the main dining room and 20 in the restaurant's lounge. The location will also feature an indoor and outdoor lounge that seats 50.

With a menu that expertly blends traditional Mexican fare with creative interpretations of local and seasonal ingredients, Mercadito is modeled after the markets chef and partner Patricio Sandoval shopped at while growing up in his native Mexico. The food at Mercadito encompasses everything from handmade corn masa tortillas used for tacos to freshly prepared ceviches, guacamoles, and salsas. Designed for sharing, the family style meals artistically mingle south-of-the-border taquerias and cantinas with local and seasonal ingredients.

A beverage menu designed by Mercadito Hospitality partners and beverage team Tad Carducci and Paul Tanguay, The Tippling Bros., rounds out the experience with creative variations of classic cocktails, incorporating Mexican ingredients and an extensive tequila list.

Managing partner Alfredo Sandoval has led the growth of the group, drawing from culinary experiences in his native Mexico and building on the success of the group's locations in Chicago, New York, and San Diego.
