Dubbed the “Rock n’ Roll Chef” by Rolling Stone magazine, Chef Kerry Simon announces a fitting partnership with All Inclusive Collection’s Hard Rock Hotel & Casino Punta Cana. Simon will open a modern American restaurant with California flair, Simon Mansion and Supper Club, at the AAA Four Diamond awarded Caribbean resort—the first all-inclusive Hard Rock Hotel in the world—in May 2013.

“Simon Mansion and Supper Club allows me to bring my organic, sustainable, and contemporary culinary approach to the Dominican Republic through Hard Rock Hotel,” Simon says. “The menu is seasonally driven, focusing on fresh, quality ingredients prepared in an accessible yet dynamic way.”

Alongside Simon Mansion and Supper Club’s Corporate Chef David Cruz, Simon slowly developed the menu over the course of a year, making frequent visits to Punta Cana and other locales in the Caribbean to taste and experience the products of the land and sea. The eclectic yet composed menu features an extensive fresh sushi menu as well as a variety of innovative appetizers, delectable entrees, dry-aged meats, and local seafood. Highlights from Simon Mansion and Supper Club’s menu include the Caribbean Lobster Roll with grilled lobster, celery, capers, lemon, and aioli; Roasted Organic Carrot and Avocado Salad with citrus dressing; Curried Crab and Watermelon Salad with arugula; Rack of Lamb served with roasted vegetable quinoa, chickpea puree, and cucumber yogurt and our selection of Prime Cuts. In addition to these seasonal dishes, Simon will also serve his signature dishes developed over years of owning restaurants throughout the country, including the Tuna Dynamite with lump crab, and red chili aioli; and the “Meatloaf” served with mashed potatoes, and onion bourbon marmalade.

The beverage program—with evolving list of light, fresh cocktails, hand-selected wines from California and abroad, and premium beers and spirits—at Simon Mansion and Supper Club will incorporate the same seasonally motivated structure as the savory menu. Simon Mansion and Supper Club’s on-site sommelier scouts wines and beers that complement the menu’s flavors and ingredients through the seasons. Additionally, the innovative and vibrant cocktail menu will showcase the Dominican Republic’s renowned rum selection in creative, fresh cocktails. Cocktails include the Anejo Highball featuring Anejo rum, orange curaçao, ginger soda; Summer Mist with Ciroc vodka, muddled grapes, mint, and simple syrup; and theHiguey Kicker, inspired by 1930’s bombshell Jean Harlow, featuring light Caribbean rum and vermouth.

Renowned interior design firm 555 International, headed by James Geier, imagined the restaurant design to mirror the home of a rock ‘n’ roll icon. Featuring multiple rooms—three of which will serve as private dining rooms—reflecting the dining room, living room, bedroom, bathroom, library, studio and patio, Simon Mansion and Supper Club will offer a peek behind the curtain of a rockstar’s decadent abode. Stand out design elements include the broken glass chandelier, oversized throne chairs upholstered in eye-catching fabrics, reflective artwork and central sushi bar.
