Cofounder and former CEO Scott Lawton will transition to bartaco's chairman of the board.

On Friday morning, Anthony Valletta was promoted to the top helm of bartaco as CEO, a position previously held by cofounder Scott Lawton, who will transition to chairman of the board. The move marks a new chapter for the NextGen Casual concept serving up street tacos and craft cocktails at its 30 locations and counting.

Valletta, who initially joined the brand as senior VP of operations in September 2021, was quickly elevated to the role of president the following year. He brings over 20 years of hospitality leadership experience to his new role, with a background that spans brands such as the Mina Group, Del Frisco’s, and Darden Restaurants. Known for his innovative approach to operational strategy and team development, Valletta has a proven track record of enhancing guest experiences and delivering strong financial results. His leadership at bartaco over the past three years as president has prepared him to take the reins and guide the company’s next phase.

Lawton, who cofounded bartaco in 2010, was instrumental in shaping the brand’s identity and navigating challenges, including the pandemic where he rolled out QR code ordering to streamline the customer experience. His efforts have positioned bartaco as a community-centric concept known for its distinctive dining experience and technological adaptability. In November 2023, Lawton also added the CEO title at Uncle Julio’s Restaurant Group.
