The United States Potato Board is celebrating the goodness of potatoes with an exciting, new recipe challenge—the Hot Potato, Healthy Potato Recipe Contest.  The Grand Prize Winner will receive an all-expense paid trip to the “Menu Innovations with Potatoes” seminar at the Culinary Institute of America (CIA) in Napa Valley, California.

Potatoes are the best-selling side dish in foodservice because of their universal appeal—flavor, familiarity, and craveability. Entries will help sing the praises of potatoes’ healthier equities, too. At just 110 calories, a 5.3 ounce potato with skin is fat-free, cholesterol-free, gluten-free, and nutrient- dense.

To win this rare opportunity to work side-by-side with elite chefs from some of the nation’s leading foodservice operations at the CIA, submit your recipe for a healthier potato side dish, appetizer, salad or entrée, along with a description of why the dish is better-for-you and what potatoes bring to the party. The runner-up will win $500 in cash, and both of the winners will be featured, along with their recipes, in online publicity and trade media releases.

The contest begins February 1 and the deadline for entries is May 31. Recipes will be judged on taste, creativity, presentation, and the provided description. Winners will be announced in July 2014. For complete rules and official entry form, visit www.potatogoodness.com/foodservice.
