The Kirkland Tap and Trotter Opens

On September 16, the James Beard Award-Winning chef Tony Maws opens The Kirkland Tap & Trotter, his second Boston-area restaurant, touting a menu of rustic, hearty fare combining phenomenal ingredients and unexpected flavors that you would find Maws cooking at home for family and friends. Located in Somerville, The Kirkland Tap & Trotter’s atmosphere embodies an eclectic and cozy neighborhood vibe akin to some of the best “gastropubs” in England.

“The Kirkland Tap & Trotter is an ‘every night of the week’ kind of establishment, where guests can feel comfortable enough to eat with their hands and hang out with their friends. It’s very fun and casual, but still focuses on serious food and drink,” says Maws.

The menu takes its lead from the kitchen’s large wood-fired grill set into a masonry base, and features a variety of familiar dishes done with Maws’ personal touch, emphasizing family-style dishes for groups to share, such as: Braised Veal Ribs with bacon and red cabbage, served alongside onion gratin; Braised Pig’s Trotter Lyonnaise topped with chanterelle mushrooms; Red Chile Salmon Head served with a radish salad; Grilled Seaweed and Fennel-Crusted Chicken paired with farm onions; and Red Curry Rubbed and Grilled Skate-Wing with cherry tomato and arugula stew.

The drink menu is also representative of the libations that Maws and his friends and family enjoy imbibing at home, and features a large beer list, and an expansive wine by the glass list tilting toward Old World terroir and funky wines made by real people. Additionally, The Kirkland Tap & Trotter partnered with Patrick Sullivan and Misty Kalkofen of Revolution Cocktails, and formerly of the B-Side Lounge, to create a unique cocktail menu with drinks that are “mixed right, shaken right, served right,” with offerings including the Green + Grain with cucumber and chartreuse, and the City Line Soda with a piña-celery soda.
