With cold air approaching, it’s almost time to trade those refreshing summer treats for the warm comfort foods of the fall. This September and October 2013 the Boston Center for Adult Education (BCAE) invites students to a variety of harvest-themed cooking classes to prepare for the end of beach season, but not the end of beach bodies! Its new healthy harvest cooking series include classes such as Skinny Jeans: Food for Weight Loss, where instructor Amy Jo Gengler will demonstrate how to cook fall foods and promote weight loss as well as Clean Plate, where Amy will show students how to clean up their act and use only seasonal foods that are good for the body. In Healthy Sides & Snacks instructor Leah Dickerson and Loni Zelfon will tackle smaller meals, steering students in the direction of healthy seasonal snacks and away from the allure of chips and junk foods. No matter what the class, students will look forward to cozying up to meals that boast the flavors of fall without the need to count calories! Please see full class schedule below.

Autum’s Best Dishes

When the air gets cooler, there’s nothing better than a heaping helping of fall comfort food! Lucky for you, Chef Leah is here to prove that “comfort” doesn’t have to mean “calories.” Students will learn how to prepare delicious, seasonal dishes that’ll ensure a happy, healthy harvest! Autumn’s Best Dishes will take place on Tuesday, September 10, 2013 for 1 session.

Skinny Jeans: Food for Weight Loss

Tired of spending time counting calories just to find out what not to eat? Learn to make a delicious dinner without wasting calories and discover alternative entree options and decadent desserts that are guilt free (and good for you, too). Skinny Jeans: Food for Weight Loss will take place on Wednesday, September 25, 2013 for 1 session.

Seasonal Fall Dinners

Join Chef and Nutritional Consultant Amy Jo Gengler and learn about to serve up sensational, seasonal meals! Chef Amy will walk you through how turn the plentiful offerings at local farmer’s markets into delectable dishes your whole family will enjoy! Seasonal Fall Dinners will take place on Tuesday, October 8, 2013 for 1 session.

Healthy Sides & Snacks

Ditch the chips! Join chef and nutritionist Leah Dickerson for class that proves that “nutritious” really can be “delicious!” This single session class will be a crash course in healthy sides and snacks that are delectable and way better for overall health. Students will learn the basic tips and tricks that turn fruit, veggies and grains into exciting eats! Healthy Sides & Snacks will take place on Wednesday, October 16, 2013 for 1.

Taco Night (R)evolution!

There's no limit to what you can put in a tortilla! Join local Nutritional Counselor and Latin Food Specialist, Amy Jo Gengler, to learn how to construct killer tacos that cover all of the healthy food bases. You will learn how to make jicama slaw, Caribbean salsas, great guacamole, Carne Asada, homemade black beans, and delicious vegetables to create a stellar meal for 1 or the ultimate taco bar for 20! (Vegan and vegetarian options will be available!) Taco Night (R)evolution will take place on Saturday, October 19, 2013 for 1 session.

Clean Plate

“You are what you eat”, and no one wants to be a doughnut! Join Chef Amy Jo Gengler and learn how to “clean up” meals by learning easy, simple ways to use healthier foods and keep the taste. Clean Plate will take place on Friday, October 25, 2013 for 1 session.

Local Food, Vibrant Health!

Learn how to create healthy, vibrant meals that increase energy, mental clarity, and joy at the table, regardless of your skill in the kitchen. You will learn how to make seasonal, fresh, inspiring meals through a few basic dietary principals that will increase your confidence and autonomy in food shopping and menu planning. Local Food, Vibrant Health will take place on Saturday, October 26, 2013 for 1 session.
