Executive Chef Ed Witt will be preparing a variety of choices such as Duck Confit served with Foie Gras Grits, Collard Greens, and Huckleberry; Smoked Shrimp & Pumpkin Salad with Frisée, Sherry Vinaigrette, and Maple Walnuts; or Sweet Potato Soup made with Apple Compote and Brûlée Marshmallow. For the main course guests can chose from Roasted Turkey Breast made with Crispy Leg, Mashed Potatoes, Stuffing, Giblet Gravy, and Cranberry Sauce; Snapper served with Cabbage Foundue, Pear, Lobster, and Pickled Mushrooms; or Eco-Friendly Suckling Pig, Sage Sausage Stuffing, Pumpkin, Brussels Sprouts, and Maple Syrup Gastrique. A vegetarian dish of Chestnut & Autumn Squash Ravioli made with Sage Brown Butter and Ricotta Salata will also be offered.
