Executive chef/owner Domenico Cornacchia and restaurant partner Aykan Demiroglu of the French oasis, Bistro Vivant in McLean, Virginia, are excited to offer patrons the gourmet, seven-ounce Pat LaFrieda Burger, served during both lunch and dinner service. Priced at $16, this custom meat blend of two parts chuck, one part brisket, and one part boneless short ribs is topped with Niçoise black olive tapenade, grilled tomatoes, vinegar-spiked grilled onions and aged Comté cheese on a Brioche Burger Bun from Panorama Bakery and completed with a side of frites.

Pat LaFrieda was 22 when he took over the family meat business, but instead of running it the same way his father and grandfather did, this third-generation owner became a key player in the gourmet hamburger movement, supplying custom protein blends to some of New York’s best-known restaurants and working with renowned chefs such as Mario Batali, Danny Meyer and Laurent Tourondel. The burger meat itself is chopped instead of ground, making for a coarser “steak bite” patty, and comes entirely from whole muscle with no trimmings or mechanically deboned meat. The Pat LaFrieda blend is 100 percent USDA certified Black Angus cattle, all domestically sourced, USDA certified, inspected and graded Choice or higher with no artificial growth proponents, hormones, or antibiotics. Pat LaFrieda Wholesale Meat Company has been serving New York City and the surrounding area for over 90 years.
