Uchū Hospitality Debuts Don Wagyu and Sushi on Janes at Gotham West Market

Restaurant group Uchū Hospitality debuted Don Wagyu and the fourth location of Sushi on Jones at the award winning food hall Gotham West Market in Hell’s Kitchen. A joint restaurant concept, the eatery further expands on the brand’s ethos of offering an approachable take on Japanese cuisine through a fast-casual dining experience.

The 10-seat dual concept location will offer both Sushi on Jones and Don Wagyu menus. The Sushi on Jones menu includes the option of either a 7-course ($35) or 12-Course omakase ($58) with hirame, albacore, hotate, arctic char, and more. When booking a reservation at the counter for omakase, guests have access to Don Wagyu’s menu as well. Coming soon, Beverage Director Bill Wood will unveil a curated menu with sake, beer and wine to accompany the meal. 

For those on the move, the take-out window offers convenient grab-and-go boxes featuring a combination of Nigiri and Maki in addition to the full menu for Don Wagyu, where guests can order and take a seat anywhere in the market.

From Executive Chef Corwin Kave, Don Wagyu opens with its signature American Wagyu Sando made with 30 day dry aged Mishima Striploin (cuts will change monthly) in addition to a more robust menu featuring snackable items that utilize all of the wagyu product. Notable highlights include WagNuggets ($15) 6 pieces of wagyu and free range chicken with housemade sauce options of tonkatsu, yuzu kosho ranch, or hot honey mustard; the house-made Wagyu Dog ($19) with crispy shallots and pickled mustard seed, and the Nashville Hot Chicken-inspired; and the Hot Wagyu ($26) featuring American Wagyu brined in buttermilk and togarashi, fried and topped with a spicy sauce of fermented chili, ginger and sansho pepper, and garnished with bread and butter pickles. For dessert, guests can indulge in Whisky Pudding ($9), a take on butterscotch pudding incorporating Japanese whiskey, and topped with vanilla whip and almond cookie.

Sushi on Jones’ omakase bar has received critical acclaim for the chef’s choice tasting menu served in 30-45 minutes since its original location opened in NoHo in 2016. Don Wagyu was one of the first restaurants in New York devoted to offering wagyu beef sandwiches in a relaxed setting.
