Tre Rivali, the Mediterranean-inspired Modern American restaurant located adjacent to The Kimpton Journeyman Hotel in Milwaukee’s Third Ward, and The Outsider (310 E. Chicago, 9th Floor), the hotel’s hip rooftop, have updated their menus for summer.

Executive Chef Heather Terhune pulls inspiration from her travels abroad and local farmers markets to update the menu, incorporating a variety of seasonal ingredients like asparagus, ramps, spinach, melons, grapefruit, herbs and more. I’ve outlined a few of Tre Rivali’s new menu items below, including:

Wood Grilled Pork Spiedini ($12): Pork skewers, spiedini means “skewer” in Italian, with a coriander, honey, and olive oil marinade, grilled with half a peach and honey-orange-ginger glaze

Chilled Corn & Saffron Soup ($9): This vegan dish is perfect for light summer dining, featuring fresh corn, coconut milk, a variety of seasons, and garnished with lump crab

Wood Grilled Artichokes ($10): Inspired by Chef Heather’s time in Rome, these globe artichokes are tossed in olive oil, wood grilled, and served with half of a grilled lemon and roasted garlic tarragon aioli

Compressed Watermelon ($11): This dish combines compressed watermelon (cubed watermelon pureed with watermelon scraps, lime juice, honey and vinegar sealed overnight to become more concentrated), topped with pickled watermelon rind (eco-friendly) and a corn fritella and speck, a smoked and cured ham topping

Carrot Gnocchi ($18): Carrot gnocchi is served with house-made rabbit sausage, peas, carrots, butter, rabbit jus and topped with shaved raw carrots, pea tendrils and dill salad

Grilled Florentine Steak ($44): Serving two people, this dish features a 22 oz. porterhouse steak, duck-fat roasted potatoes, fried lemons and black truffle veal sauce

Other Tre Rivali additions include Wood Roasted Mussels, Chilled Gulf Shrimp, Shaved Celery & Escarole Salad, Wood Grilled Mushroom Pizza, Mascarpone Cheese Ravioli, and Grilled Mergeuz Sausage.

In addition, The Outsider has updated their summer beverage menu to create tasty seasonal drinks perfect for cooling down after work or enjoying a Sunday Funday. Lead Bartender Gen Longoria crafted the following:

Persephone’s Great Return ($14): Referencing when the Greek goddess returned to her mother and the Earth began to bloom, this cooling, floral cocktail features Hendricks gin, dolin dry vermouth, St. Germain elder flower liqueur, rosewater syrup, lemon, peppermint mint tincture, and coconut water

Brave Hunter, Soft Speaker ($14): A fun take on mescal, this cocktail includes Del Maguey Vida Mezcal, El Jimador Reposado, strawberry, red bell pepper, lime, cilantro, bittercube Jamaican #2, and Stigler Radler

Eighteen Hours of Noon ($12): Pimm’s No 1., Tanqueray, Luxardo cherry infused ramazzotti, ginger, lemon, cucumber, ginger beer, mint, black Hawaiian salt
