Thirsty Lion Gastropub, a restaurant concept known for its from-scratch cooking and seasonal menus with fresh and local ingredients and extensive craft cocktails & beer menu, has announced the opening dates of its next North Texas location. Thirsty Lion Gastropub will open its first two-story rooftop restaurant & Bar at Grandscape in The Colony, Texas, in early April 2022.
Thirsty Lion Gastropub has been expanding since its launch in 2010 with 9 locations in Oregon, Arizona, Texas and Colorado.
The Colony’s Grandscape is one of the largest and most unique, mixed-use real estate developments in the country owned by Warren Buffett. Thirsty Lion will join a variety of popular restaurants, an outdoor amphitheater, a convention center, a hotel and spa, and more. Thirsty Lion’s Grandscape location will be its most ambitious yet. Inside, the design will showcase a polished and upscale version of the Thirsty Lion. There will be rustic wood finishes mixed with modern decorative light fixtures. Expect pops of rich color layered with bold pattern and texture.
The Gastropub’s main floor has 2,997 square feet of indoor dining and bar area and 6,643 square feet of outdoor patio. The second floor has 2,025 square feet of indoor dining and bar area and outdoor patio has 1,414 square feet. Outside, the expansive and inviting green space will have lawn games like corn hole and giant Jenga and the patios will have a large fire feature for group seating and flat-screens, perfect for beautiful sunshine-filled days and chillier winter and spring nights. The patios will be covered with option for heating and able to be booked for special events. Total indoor seating capacity will be 153 persons and outdoor seating capacity will be 282 persons.
Thirsty Lion’s culinary commitment is to provide a variety of options that feature scratch-made, multi-cultural cuisines, with an emphasis on local ingredients and bold flavors. A seasonal fresh sheet focuses on the changing season’s offerings, featuring unique ingredients including fresh seafood, quality meats and local vegetables and fruits. Signature dishes will include the Gorgonzola-infused Gastropub Burger; Bacon Wrapped BBQ Prawns; Beer Battered Fish & Chips; Gochujang BBQ Pork & Kimchi Fried Rice; the Seared Ahi Salad; Baja Fish Tacos; and Traditional Scotch Eggs. The menu also features shareable appetizers, salads, sandwiches, fresh seafood, half-pound gourmet burgers and steaks. Vegetarian and gluten-free options are also available.
Thirsty Lion features a centerpiece bar that features a large selection of craft cocktails that utilize combinations of fresh fruit purees, juices and premium liquors, beers on tap, many of which are local to Texas, offering a beer on hand for every palate and extensive wine list. The list features modern takes on classic cocktails as well as signature drinks like their Grapefruit Basil Martini, Blood Orange Margarita and Old Fashioned.
One of the many things Thirsty Lion Gastropub is known for is their elevated sports viewing experience. The restaurant is equipped with dozens of HD flat screens inside and out. Thirsty Lion specifically programs its sports schedule every day to make sure that all sports viewing requests in the area are met. With the highest quality audio and visual sound system, you’ll never be disappointed watching your favorite sports team on the screen while indulging in scratch-made dishes and sipping on your craft cocktail.
Expect lively weekend brunch and weekday happy hour with specially priced fare from 3 until 6 p.m. Weekend Brunch will include Mimosas and Bloody Mary’s by the bottle.
Thirsty Lion Grandscape will join two other existing Texas locations at Toyota Music Factory in Irving and Glade Parks in Euless. Soon to follow is Preston Hollow Village opening in North Dallas in late Spring 2022.
