TAG Restaurant Group (TRG), helmed by Denver restaurateur Chef Troy Guard, kicked off this exciting series in January 2022 with his mission to raise funds to help the communities affected by the devastating January Marshall Fires with a fundraising program benefiting Boulder Community Foundation. He wanted to give other Colorado chefs the opportunity to get creative and raise funds for a charity near and dear to their hearts.
This May, the Celebrity Chef Taco Series welcomes Chef Orlando Benavidez from Bits n’ Pieces Con Cerveza. Chef Benavidez presents his take on the taco, the Beef Cheek Taco. The Taco features Smoked Out BBQ beef cheeks, pickled red onions, avocado cream, tomatillo salsa, topped with chicharones and micro cilantro on a Hatch, NM Red Chile tortilla ($6.75). Chef Benavidez’s Beef Cheek Taco will be available May 2-15.
“This taco is definitely one of my favorite tacos I’ve ever made. These beef cheek tacos are my version of traditional Barbacoa. The amount of smoke that is on these is perfect using my Smoked Out BBQ dry rub,” says Chef Benavidez. “Everything that goes on top of them such as the pickled red onions, the avocado cream, the tomatillo salsa and then topped off with, chicharones for that perfect amount of texture against the creaminess of the beef cheek, and micro cilantro works so well with each other.”
$1 of every taco goes towards Chef Benavidez’s charity of choice, No Kid Hungry, which is the only national campaign committed to ending childhood hunger in the U.S.
Last month, thanks to the Denver community, Chef Espiricueta’s taco sold an incredible 800 tacos, contributing to the total of around $4,000 raised so far for various Colorado charities.
