Proper Hospitality announced three distinctive food and beverage experiences at the forthcoming San Francisco Proper Hotel, opening in the city’s Mid-Market neighborhood.
Located in a historic flatiron building at the corner of 7th and Market Streets, San Francisco Proper Hotel’s restaurants and bars will pay homage to the City by the Bay and its colorful history and spirit of innovation. Culinary Director and Executive Chef Jason Franey (Campton Place, Eleven Madison Park, Canlis, Restaurant 1833) will lead the culinary programs, while local partners and celebrated cocktail masters Josh Harris and Morgan Schick of BVHospitality (Trick Dog, The Bon Vivants) will oversee the beverage programs. Franey and BVHospitality have received a combined total of six James Beard Award nominations.
“I’m thrilled to return to this city and work alongside such a passionate team at San Francisco Proper,” says Franey. “We’re turning to the Bay Area's bounty of influences, as well as our high-quality local ingredients, to help shape our menus and bring unique culinary experiences to the Mid-Market neighborhood.”
Harris and Schick jointly state, “We're very excited to be a part of a hospitality project of this nature, and we believe that it’s the first of its kind in San Francisco. We love being involved with Proper Hospitality because we share a philosophy of building communities, a commitment to outstanding service and creative thinking, and a drive to offer unique experiences to our hometown of San Francisco.”
Anchoring the hotel’s culinary offerings will be Villon, a sophisticated all-day restaurant for Proper guests and locals alike. Here, Chef Franey will showcase his signature creative contemporary American cuisine, rich with unexpected twists and inspiration drawn from San Francisco’s bountiful culinary culture, cooking traditions, and seasonal ingredients. “Our aim is to create the ‘living room’ of the neighborhood, a vibrant gathering place encouraged by a social, shared-plates dining experience,” says Franey. “We’re serving classic dishes in fun and approachable but subtly refined ways—what I like to call ‘comfort geek’ cooking.” Complementing Franey’s menus, Villon’s “7x7” cocktail menu by BVHospitality will pay playful homage to the city’s seven-by-seven-mile area, featuring seven thematic categories with seven cocktails in each. A thoughtfully curated beer and wine list will spotlight regional California and international selections, pairing with Villon’s cuisine.
Situated in the restored historic lobby of the nearly 100-year-old building, Villon will span three distinct spaces: the European-styled lobby salon, featuring art arranged into a series of living room vignettes; the dining room, with detailed furnishings and elements from an array of modernist styles; and an intimate private dining room with seating for up to 14.
Charmaine’s, the rooftop bar and lounge 120 feet above San Francisco’s bustling Market Street, will pair inventive beverage and culinary offerings with 360-degree city views. Harris and Schick have created a cocktail menu inspired by the laid-back feel of al fresco imbibing, featuring the vibrant flavors, original combinations, and unique ingredients for which BVHospitality is known. Offerings will include outside-the-box large-format drinks and highball service for groups—a spin on traditional bottle service—as well as a wine list highlighting bubbles and rosé. Charmaine’s will also offer a seasonal menu of small plates by Chef Franey, in the form of reimagined nods to crowd-pleasing bar snacks.
Evoking the spirit of San Francisco’s European roots and history, the design of the indoor/outdoor spaces will reflect the natural beauty and decorative living environments of the Viennese Secession art movement. Across Charmaine’s scenic lookout point, ample fire pits and heaters will keep guests cozy year-round. Accommodating more than 200 guests, Charmaine’s will also offer an unparalleled setting for special events.
At the intersection of McAllister, Jones, and Market—the point of the hotel’s flatiron-style building—La Bande will present another lively neighborhood gathering place from morning to night. La Bande will feature Chef Franey’s house-made pastries, tartines, sandwiches, salads, and other casual bites, along with locally roasted artisan coffee, tea, and a selection of beer and wine. Additionally, La Bande will serve as a neighborhood specialty market, offering an assortment of curated products and house-made provisions to go. Showcasing stylish elements of black and white stripes representative of its name, La Bande encourages guests to savor a moment to sip and relax on the patio or at a picture window overlooking San Francisco’s vibrant cityscape.
San Francisco Proper Hotel and Villon will welcome their first guests this summer, with Charmaine’s and La Bande to open shortly thereafter.
