Robert Thompson’s new restaurant concept, Three Saints Revival, has opened in Denver. The concept is a vibrant, bohemian wine and cocktail restaurant offering tapas, small plates and dishes inspired by every edge of the Mediterranean. The new restaurant is located not far from Denver’s Union Station and the new concept is anchored by a Med-centric spirit and craft cocktail program with a culinary backbone of tapas and small plates that encourage sharing, socializing, sipping and snacking.
Three Saints Revival embodies a revival in every sense as we experience a “return to life” post-COVID into this vibrant, warm, intensely colored world. It’s an environment rich in wine, spirits, spices, flavors, and ingredients. The thoroughly reimagined space has gone under a full top-to-bottom renovation and design overhaul and is show-stopping: alive with swirling colors, modern textures, and repeating patterns, it’s designed around the concept of a Bohemian dream sequence.
The 5,200-square-feet space houses 116 seats including tall community tables for group dining, lounge seating and signature circular booths dotting the floor.
