Shareable, snackable fritters are made from a mixture of fresh, sautéed corn, shallots, and garlic combined with bacon crumbles, scallions, and Chef-mate ¡Que Bueno! White Cheddar Cheese Sauce. Served with low-fat, savory dipping sauce.

INGREDIENTS

Vegetable oil as needed
1-3/4 cup Corn, fresh, cut from the cob
1/4 cup Shallot, minced
1 Tbsp Garlic, minced
2 Tbsp Scallions, thinly sliced
1/4 cup plus 1 Tbsp Bacon, cooked and crumbled
3 Tbsp Flour
1/4 cup plus 2 Tbsp Milk
2/3 cup Chef-mate® ¡Que Bueno!® White Cheddar Cheese Sauce
1 each Egg
1 cup Whole wheat bread crumbs
Panko bread crumbs as needed

PROCEDURE

1. In a medium sauce pan over medium-high heat, sauté the corn, shallot, and garlic until corn has started to turn golden and shallots are soft, 8-10 minutes. Stir in the scallions and bacon. Add flour and stir to coat all ingredients before adding milk and stirring until completely incorporated with flour and the mixture has thickened. Continue to cook for an additional 2-3 minutes, stirring constantly.

2. Remove from heat and allow to cool slightly before folding in egg and cheddar sauce until fully incorporated. Fold in bread crumbs. Using a #30 scoop, scoop the mixture and place into a container with panko bread crumbs. Press the balls slightly to flatten, making sure they are well coated with panko bread crumbs. Place on a parchment paper–lined sheet tray and freeze for at least one hour before service.
