Rare Roots Hospitality announced that its newest restaurant, Chapter 6, is scheduled to open in early summer 2023. Chapter 6 will bring the flavors and traditions of the Western Mediterranean to South End, offering bold dishes that show off the flavors of the coasts and fields of Spain, Morocco, Algeria, Tunisia, France, and Italy.
Chapter 6’s menu will be built around small plates, entrees made to share, cocktails and wine, all reflecting the culinary traditions and culture found along those six coastlines–seafood tower to tagines, parsley to paprika, Moroccan Syrah to Spanish Rioja.
“We believe a meal should be like an unforgettable trip. With Chapter 6, we’re bringing the spirit of exploration and celebration to the table,” says Tim Buchanan, director of operations for Rare Roots Hospitality.
Buchanan, along with Rare Roots chefs Scott Hollingsworth and Jonathan Cox, will travel to Spain and Morocco later this month to research, explore, and refine the menu they are currently writing for Chapter 6.
“We’ve studied a lot about this region of the world and we all admire the food and flavors, but we know that seeing and tasting will be integral in our ability to accurately and vibrantly bring these cultures we love to Charlotte,” says Chef Cox.
Brittany Kellum, currently Bar Manager at Fin & Fino, will create the cocktail menu for Chapter 6. She expects the drinks to represent the flavors of the Western Mediterranean and, true to form, push the envelope of Charlotte’s cocktail scene. She will continue to lead the bar program at Fin & Fino even after Chapter 6 opens. Hilary Demitt will lead the wine program at Chapter 6, seeking out standout wines and varietals from the region. The team will be led by Rare Roots alum Ellis Lindsay, current general manager of The Porter's House in Waverly.
Chapter 6 will be located at 2151 Hawkins Street, on the ground floor of The Line development overlooking the Rail Trail. The restaurant will feature roll-up garage doors to blend the indoors with the out and seating for 240 guests in the main dining area, bar, lounge, and on the patio. Upon opening, Chapter 6 will serve dinner and an all-day menu on the weekends.
