The Midnight Shift, the Texas-American inspired eatery located within Cotton Court Hotel, announced the appointment of Kate Diehl as executive chef. In her new role managing all culinary operations at Cotton Court, Chef Diehl will reimagine The Midnight Shift’s current offerings, introducing rotating seasonal menus that embrace the diverse flavors of Texas.

“We are looking forward to welcoming Kate’s fresh take on The Midnight Shift’s Texas-American inspired cuisine that will only further elevate the dining experience at the restaurant,” says Gus Luna, general manager at Cotton Court. “We are confident that Chef Diehl will be a huge asset in leading the property’s food and beverage program and providing a high-quality experience to guests.”

Chef Kate Diehl brings more than twenty years of culinary experience to her new role as executive chef at Cotton Court. Raised in Lubbock, Texas, Diehl moved to Houston in 1997 to attend The Art Institute of Houston and pursue a degree in culinary arts. In efforts to follow her passion for the food & beverage industry, she began her career as a sous chef at Hotel Valencia Riverwalk in 2003, where she assisted in creating menus and crafting recipes while managing the back of house staff.

After spending three years at Hotel Valencia Riverwalk, Diehl moved back to Lubbock to open her first restaurant with her husband, Home Café. Leading both the entirety of the business and kitchen, Diehl created and executed menus daily while perfecting her hospitality craft. Soon after, Kate and her husband founded The Crafthouse Gastropub in Lubbock.

In her role as executive chef, Diehl will reshape the dishes at The Midnight Shift, in addition to managing all culinary operations at Cotton Court. Combining her experience in hospitality leadership and creative background in the f&b industry, Chef Diehl plans to reimagine Midnight Shift’s current offerings, introducing seasonal menus and embracing the diverse flavors of Texas, further establishing the restaurant as a local destination to enjoy fresh-made food, handcrafted cocktails and weekly live music.
