Mastro’s Restaurants Resurrects Century-Old Bourbon

Beginning August 1, Mastro’s Restaurants, with a location in Chicago’s River North neighborhood, will offer Bourbon aficionados and discerning diners the opportunity to savor Kentucky Peerless Distilling Company’s Single Barrel Bourbon for the first time in more than a century. The critically acclaimed steakhouse is the first restaurant in the country to collaborate with the storied distiller after a 102-year hiatus.

“Mastro’s spirits program is designed to offer guests the finest, most curated selection of spirits in the world,” says Robbi Jo Oliver, Sr. Director of Wine & Spirits, Mastro’s Steakhouse. “The bourbon industry is on fire, so when Peerless approached us to collaborate on their first release in over a century, we jumped at the opportunity. Their craftsmanship and commitment to excellence is a natural fit for our brand. We are excited to share this outstanding Single Barrel Bourbon with our patrons.”

The Mastro’s team hand selected a single barrel from the Peerless Distillery Barrel Room, which they named ‘Chocolate Oak’ after tasting the Bourbon’s distinctive notes of dark chocolate and spice. Made from sweet mash rather than sour, non-chilled filtration, ‘Chocolate Oak’ is barreled at 107 proof and bottled as a barrel-strength whiskey. The single barrel produced 233, 750 mL bottles of ‘Chocolate Oak’, which will be exclusively available at Mastro’s Steakhouse and Mastro’s Ocean Club locations nationwide.

Peerless began barreling in March 2015, patiently crafting one barrel at a time to make fine Rye and Bourbon. Corky Taylor, fourth generation and CEO, has been breathing life back into his great-grandfather's legacy that originally started in 1889. Standing true to what the first generation once started, the Taylor family has taken no shortcuts in making a quality product surpassed by none.

To commemorate the launch of the distiller’s first Bourbon in 102 years, Mastro’s will offer patrons indulgent pours, flights and specialty cocktails, as well as decadent dishes that pair perfectly with the Single Barrel Bourbon including our Double Cut Pork Chop, Bacon Steak, New York Pepper Steak, Bone Marrow, Truffle Butter Sautéed Wild Mushrooms and French Fries.
