Lotte Hotel Seattle announced the promotion of Caleb Babcock from Sous Chef to Executive Sous Chef. Chef Babcock has been a key player in Charlotte Restaurant & Lounge’s dynamic culinary team since 2020. Comprised of creative individuals helming an extraordinary dining experience, Charlotte Restaurant & Lounge features a-la-carte and special prix fixe menus with a locally-sourced and seasonal approach to contemporary Pacific Northwest cuisine along with immersive offerings for guests. Last fall, the team introduced a music-inspired dinner series that delighted all five senses, tasting exciting flavors timed to the musical progression of a live orchestra during the meal.
Approaching a decade of experience in the hospitality industry, Chef Babcock has vast restaurant experience. His career began with training at Vail Resorts and from there has moved on to work at a wide range of privately owned restaurants. In October 2020, he joined the team at Lotte Hotel Seattle. In this new role, he will continue expanding his culinary knowledge and leading the team while introducing new and innovative F&B programming to the restaurant.

Chef Babcock looks to the future with excitement as he looks to further amplify the Seattle culinary space with new flavors and concepts. Current seasonal offerings include a Roasted Black Cod with kuri squash, wild rice, pumpkin beurre blanc and a Roasted Squash Bisque with candied walnut crema, lingonberry, brown butter. The restaurant has earned a reputation for being a celebratory spot for locals and hotel guests alike, inspiring the culinary team to create a dynamic menu perfect for occasions big and small.
Charlotte Restaurant & Lounge is open for breakfast from 8:00-11:00 AM daily and dinner from 5:00-10:00 PM, Tuesday through Saturday. The Lounge is open from 3:00-11:00 PM, Tuesday through Saturday and Happy Hour is from 3:00-6:00 PM, Tuesday through Saturday.
