Lotte Hotel Seattle announced Cherry Tsui has joined the team as Director of Food and Beverage and Jeffrey Hunter, opening team member and visionary behind Charlotte Restaurant & Lounge’s most notable dishes, has been promoted to Executive Sous Chef.
From artistically designed cakes and desserts to a hugely popular Summer Solstice prix fixe menu, the culinary team at Lotte Hotel Seattle has continued to surprise and delight both hotel guests and locals alike since opening its doors in September 2020. With the addition of this new talent, the team is looking forward to creatively building upon the culinary excellence for years to come, beginning this month with a special Prix Fixe Anniversary Menu. From September 15 – October 15, Charlotte Restaurant & Lounge will offer a 5-course Chef’s Tasting Menu, celebrating the bounty of local, seasonal ingredients that represents early Fall in the Pacific Northwest, including local shellfish, mountain rose apples, geoduck, uni, and heirloom squash.
