The Lost Cajun Adding 3 New Restaurants in Colorado

The Lost Cajun, a family-friendly restaurant focused on authentic Cajun food and hospitality, has announced the development of three new restaurants in Colorado. Founded by Louisiana-native Raymond “Griff” Griffin, the restaurant that focuses on providing a down-home atmosphere and southern hospitality you can feel is coming to Highlands Ranch, Parker and Castle Rock, Colorado.

Lease negotiations are currently underway for the first location in Highlands Ranch, while the site selection process is beginning for Parker and Castle Rock. The restaurants will be owned and operated by long time area residents Brad and Nikki Bach. The couple has a long history in the restaurant industry and will bring a vast amount of experience to the stores. The first location is slated to open in fall 2019.

“We are incredibly excited to bring The Lost Cajun to our community,” Brad says. “We will offer a remarkable, first-class dining experience with the authentic taste of Cajun cuisine. We experienced the quality of the food and flavors first-hand, and we were hooked. We’re looking forward to bringing a family-focused, customer-first restaurant to our friends and neighbors.”

The couple’s relationship with the restaurant industry goes back to high school, where they met 30 years ago while working in a pizzeria. After college, they opened and operated their own restaurant in the area for almost nine years before starting a family and moving on to positions in the corporate world.

“We always knew we wanted to go into business for ourselves again,” Nikki adds. “If we didn’t follow that dream now, we would have missed out on a great opportunity. The Lost Cajun was a perfect fit for what we were looking for.”

The Lost Cajun’s menu offers diners a sampling of traditional Cajun fare, including a variety of gumbos – seafood, chicken and sausage, and vegetarian. Red beans and rice, fried seafood, crawfish etouffee and lobster bisque also top the menu, as does another Cajun staple, jambalaya. And what Cajun restaurant would be complete without beignets for dessert?

The Lost Cajun further distinguishes itself with a fantastic down-home atmosphere – a true hole-in-the-wall with wooden tables, unique decorations and an expertly crafted playlist of Zydeco music. The open kitchen concept harks back to the wooden counters in Louisiana’s gumbo houses; patrons can watch their food being cooked and hear the courtesy and respect commonly associated with Cajun culture.
