TAG Restaurant Group (TRG), helmed by Denver restaurateur Chef Troy Guard, kicked off this exciting series with his mission to raise funds to help the communities affected by the devastating January Marshall Fires with a fundraising program benefiting Boulder Community Foundation. Thanks to the Denver community, Guard was able to sell an incredible 1,158  tacos, raising money for the Boulder Community Foundation for families who needed support the most this past January.

Los Chingones’ four Colorado locations continue their Celebrity Chef Taco Series, with proceeds from each Taco benefitting a cause chosen by that month’s guest chef. 

This February, the Celebrity Chef Taco Series welcomes Chef Gio Diaz from Uptown & Humboldt. Growing up on the island of Puerto Rico, Diaz’s love for cooking with local ingredients started from a young age.

He attended the Art Institute for Fashion Merchandising, but then left to pursue his ultimate passion: food. He moved to Denver in 2014 and worked as a barista, baker, and served at local restaurants.

In 2020, he opened a food truck called Uptown & Humboldt, which was well received by the Denver locals. In the fall of 2021, Uptown & Humboldt was chosen to be part of Troy Guard’s Grange Hall. Gio’s menu is influenced by street food from his travels around the world, and he hopes his food not only inspires a culinary experience, but a need for travel and wander.  

Chef Gio Diaz brings a taste of Puerto Rico to Denver with his taco, “Taco Boricua.” The Taco Boricua  features  fried cheese, ground beef, sweet plantains, microgreens, red pepper, and garlic crema ($6.75). Chef Diaz’s Taco Boricua will be available February 7-20.

$1 of every taco goes towards Chef Diaz’s charity of choice, Project Angel Heart, which prepares and delivers medically tailored meals to people living with severe illnesses in Colorado.
