RivaBella, the latest concept from Innovative Dining Group (IDG) helmed by Executive Chef/Partner Gino Angelini, will offer a select amount of dinner specials featuring Mangalitsa pig beginning March 28 and available for a limited time. The West Hollywood culinary destination will be the first restaurant in Los Angeles, and among the small number of restaurants in the country, to offer the premiere protein.

Angelini will use the whole pig, sourced from Mosefund Farm, to create decadent dishes such as a roasted 6 oz loin with 8 oz of fresh black truffles and barley tortino ($100), and a tasting plate including guanicale wrapped shrimp, lardo with sea urchin urchin crustino, and pancetta and calabrese with olives and roasted peppers ($40).

A rare Hungarian heritage breed pig originally bred for royals, Mangalitsas are known in the culinary world for their deliciously marbled, intensely flavorful meat, and large amounts of sought-after creamy lard rich in omega-3 fatty acids. Having only recently returned from near-extinction, the pigs are now bred with old-world livestock traditions and make only sparse appearances on restaurant menus due to their rarity.

RivaBella is located at 9201 Sunset Blvd., West Hollywood, California 90069. Dinner is served Sunday and Monday from 5:30-10:30 p.m., Tuesday to Thursday from 5:30-11:30 p.m. and from 5:30 p.m. to midnight Friday and Saturday.
