Hyatt Escala Lodge introduces a new chef-driven restaurant and lounge, Escala Provisions Company.

The restaurant’s idyllic location, nestled at the base of the Wasatch Mountains, with 360-degree panoramic views, international fresh market cuisine, and laid back vibe define it as a destination for guests and locals alike.

Approachably priced menu options, featuring locally-sourced meats, produce and other products, offer a distinctly local sense of place, highlighting the best of what Utah has to offer.

Chef de Cuisine Amanda Buchanan presents an approachable menu featuring both regional and international cuisine and shared plates to appeal to the eclectic tastes of the resort’s diverse clientele.

A Johnny Venture menu geared towards children provides healthy dining options.

Sample dinner menu items include: buffalo chili with smoked cheese and cornbread muffin ($8); Wasatch Valley wedge salad with crisp iceberg, olives, cucumber, tomato, red onion, pancetta, feta, and lemon Dijon vinaigrette ($10); pan seared mountain trout with creamy leek and potato hash ($24); Escala pot pie with rotisserie chicken or seasonal garden vegetables ($15); stay fit-whole wheat penne rigate with oven roasted vegetables, fresh basil, and tomato sauce ($22); and s’more pie with chocolate cream graham cracker crust and toasted marshmallow ($8).

At Escala Provisions Company, Chef Buchanan brings more than 20 years of restaurant and hospitality experience, and a passion for using local ingredients to create a sense of place in her dishes.

She comes to Park City from Hyatt Regency Atlanta, where she served as executive sous chef since 2008.

The New Mexico native seized the opportunity to come to Park City to get back to her Southwestern Roots. A self-taught chef, Buchanan draws inspiration from her roots and classic New Mexican-style cooking, known for its unique spices, to create simple flavorful dishes.

A comfortable, contemporary setting for families, couples, or groups, Escala Provisions Company’s high design features warm textures of dark wood paneling, richly-colored fabrics, cork floors, custom decorative lighting, and stone glass tables.

These features create a convivial, yet intimate atmosphere, with colors reflecting the native local spectrum of greens, golds, and mineral hues. The honeycomb design pays tribute to Utah, the bee state.

Utah-inspired artwork, including a topographical map of Utah, which surrounds the glass pebble fireplace at the entrance, visually anchors the interior and provides a distinctly local accent.

The open floor plan features an expansive kitchen with a wood-stone open-hearth oven, showcasing the chefs at work.

A heated outdoor wraparound terrace provides vistas of the Wasatch Mountains and Canyons Resort ski runs.

The restaurant’s contemporary rustic design was created by a seasoned design team including Design Group Carl Ross, based in Southern California, and the Salt Lake City office of international architecture firm the IBI Group.

Adjoining the restaurant is an on-site urban market, which offers guests an abundant selection of globally and locally-sourced food and beverage options, including local cheeses, jams, honey, pastries, specialty coffees, flatbreads, and paninis. 

Guests can order grocery items to be stocked in their rooms, before their arrival, to prepare meals in their suite’s ample modern kitchens. The market also features high-quality gourmet takeaways for guests to enjoy in their rooms or pack for the slopes.

Escala Provisions Company will offer breakfast, après ski, and dinner options, as well as a full bar serving a creative menu of handcrafted cocktails, including the signature Honey & Lemon Margarita made from locally-sourced honey.

A straightforward wine list focuses on wines from California along with an international selection, with affordable glass and bottle options.
