Hogsalt to Debut Bavette's Steakhouse & Bar in Las Vegas

Renowned Chicago restaurant group Hogsalt is the latest collaborator announced by MGM Resorts International and New York-based Sydell Group as part of the Park MGM culinary experience. Bavette’s, the brightest star of Hogsalt’s constellation of celebrated restaurant concepts, will make its mark on Las Vegas this October.

Like its Chicago sibling—feted by Esquire, Zagat, Food & Wine, OpenTable and tapped by Andrew Harper as one of the best steakhouses in the world —the new Bavette’s will deliver decadently reimagined steakhouse fare with a dash of French flair. The eclectic menu will use generous and sumptuous sides and desserts to frame impeccable classics such as multi-story seafood towers and a bone-in dry aged ribeye that will renew even the most jaded palate’s faith in steak.

A curated cocktail and wine program will both nod to the history of steakhouses and wholeheartedly embrace Bavette’s 1920s speakeasy vibe. Glowing chandeliers and sultry jazz will transport guests into an intimate space that blends Gilded Age opulence with the wood and leather comforts of chop houses gone by.

Hogsalt’s commitment to extraordinary food, genuine hospitality, and making the indulgent approachable, has yielded more than a dozen acclaimed establishments, including Gilt Bar, Doughnut Vault, Maude’s Liquor Bar and Au Cheval, an upscale diner praised by both Bon Appetit and Conde Nast Traveler for serving one of the country’s best burgers.

Hogsalt’s founder, Brendan Sodikoff, has been recognized by Crain’s Chicago Business and the Chicago Tribune for his creativity, attention to detail and high standards of service.
