Restaurateur and Chef/Owner Nick Dedier will be introducing Almighty Food Co. with Partner and Beverage Director Alexa Hazelton to the Main Boulevard in El Dorado Hills on August 9, 2022. Almighty Food Co. is a fine-casual restaurant that fosters relationships with local farms to provide only the highest quality ingredients and sustainably sourced meats and vegetables in a familial setting for local communities from East Sacramento through Placerville. Almighty Food Co. will also be a destination for travelers passing through on their way to Lake Tahoe or the nearby National parks or lakes through the Highway 50 corridor.

Similar to the two sister concepts, Milestone in El Dorado Hills and Mom & Pop Chicken Shop in Cameron Park, Upstream Hospitality Management Company co-founders/partners Dedier and Hazelton showcase seasonal ingredients, quality food, high-level service, and a unique focus on community hospitality that welcomes diners near and far to their new concept. “We have been inspired by the work of Sonny’s Farm in nearby Cameron Park and the work of well-known American farmer, lecturer, and author Joel Salatin – both of their investments in committing to regenerative, local, and sustainable animal husbandry and farming are inspiring,” says Dedier. “We’re excited to continue our mission of showcasing an elevated level of cuisine and hospitality to El Dorado Hills with the opening of Almighty Food Co.”

Dedier and Hazelton’s daily practice of eating well and being well influenced their decision to open Almighty Food Co. The menu boasts over 70% vegetarian, 90% gluten-free, and 20% vegan options entirely prepared without using refined sugars or flour in the kitchen. In addition, nearly all proteins are sourced within ten miles of the restaurant and the remainder is sourced from the greater Sacramento area. Almighty Food Co. will offer an affordable everyday solution for high quality and well thought out food that fits every diet, with a focus on quality and simplicity.

”What is most important to us now is fostering resiliency within our community, beginning literally from the ground up. By better nourishing our soil we better nourish our people. Working with our nearby purveyors serves our purpose of promoting a robust local economy that acts as a buffer against worldwide supply chain issues and increasing costs,” says Hazelton. “We named this concept “Almighty” to recognize and remind us of how a small group of people can empower each other when they come together with an intention to uplift their neighbors. We’re here to see how much good we can grow and how much fun we can have in this small yet mighty restaurant with a big idea.”

Chef/Partner and Founder Nick Dedier began his hospitality career at the age of 15 and has held nearly every restaurant position, from casual dining busser and bartender to management and executive roles. Dedier’s experience includes the Auberge Resorts, Daniel Boulud’s “Dinex” restaurants, and the Thomas Keller Restaurant Group, where he spearheaded the development and launch of the much-lauded Ad Hoc + Addendum signature Buttermilk Fried Chicken concept. Now, with Almighty Food Co., he is turning his sights towards opening a fine-casual restaurant that focuses on healthy, light, everyday cuisine featuring fresh, sustainable ingredients. Dedier graduated from Sacramento State University and The Culinary Institute of America, New York.

Partner and Beverage Director Alexa Hazelton brings her talent and passion to the Upstream Hospitality Management Company’s collection of concepts. Like Dedier, Hazelton has held every level of position within the food and beverage industry – from local bartender and server to Restaurant Operations Manager at Montage Palmetto Bluff, South Carolina, and Food & Beverage Manager for Auberge Resorts’ five-star, five-diamond signature property The Hotel Jerome in Aspen. She studied sustainable farming & reforestation abroad in Scotland & India while earning her Bachelors from Sarah Lawrence College in New York.

Together, Dedier and Hazelton have operated well-known concepts and worked with various cuisines and beverage programs, so they have a keen eye for detail and quality. The duo have been partners in business and in life, and share a passion for hospitality by showcasing local ingredients, seasonal and sustainable cooking, and creating awareness in the community by working with nearby farmers and sharing their love of the restaurant industry.

Dishes that are “good for the body and good for the soul” include tapas and shareables like the Garlic Confit Hummus with fresh crudite ($11); Apple Hill Cider Red Beets with avocado and mandarin ($13); Baked Local Brie with honey, nut & apples ($17); Teriyaki Glazed Chicken ”Okonomiyaki” ($12); Conserved Mushroom Quesadillas & Sunny Egg ($11.50); and Naked Buffalo Chicken Satay ($13). Seasonal salads and sandwiches feature The Almighty Chef’s Salad: Sonny’s Farm chicken, heritage berkshire bacon, Prairie Breeze white cheddar, soft egg, roast corn, tomato, onion, cucumber, avocado, focaccia croutons, Almighty vinaigrette ($18); Avocado “Toast” Everything Bagel with Almighty spread, sprouts, cucumber, pepitas, pickled red onion, sesame seeds ($14); Thick Smoked Cheddar-Burger: smashed patty, ghee charred onions, almighty spread, baby kale, house garlicky pickles, swiss, aged & smoked goats milk cheddar ($17)

Larger share plates include Cast Iron Organic Jerk Chicken: marinated, roasted, pulled, and dressed Sonny’s Farm chicken, charred onion & bell pepper, fresh pineapple relish, Almighty black beans n’ rice ($27); Scottish Loch-Duart Salmon: seared to medium rare, cucumber & tomato caprese, fennel, crispy potatoes, olive oil, creme fraiche, chevre, dill ($29); and Truffle Risotto: housemade black truffle oil, conserved wild mushrooms, fresh chevre, porcini & wild mushroom gravy, summer corn ($27).

Almighty Food Co. relishes nutrient-dense food, sourced and prepared responsibly. Culinary partners include Resting Bee Face Local Honey, CB Supplements Collagen, Flourless Bakery Placerville, 24 Carrot Farm Placerville, Sonny’s Farm Cameron Park, and all of the farming partners from the El Dorado Hills Farmers Market. Sonny’s Farm is a new regenerative & sustainable farm, only 8 miles away. 

Hazelton has created a beverage menu that features Northern California Wines and hyperlocal Sacramento and El Dorado beers as well as a “Not So Basic” Frose, “Almighty” Sangria, and Fresh-squeezed Mimosa. Other non-alcoholic beverages include housemade, sugar-free “Liquid Death” sodas like Lemon Lime Agave, “Bushberry” & Cream, and Ginger & Local Honey. Juices and cold brews are available in flavors like Ginger-Carrot-Apple or Cold Brew & “Chocolate Almond Milk.” Selections of protein shakes include Fresh Squeezed Orange Creamsicle and Green Tea & Banana.

Design

The team has added thoughtful touches to their space that was formerly Mom & Pop Chicken Shop in El Dorado Hills. The intimate space features comfortable booths, outdoor and bar seating, and a grab-and-go section. Upon entering the restaurant, guests are welcome to take a seat in their preferred area and order to their heart’s desire. Almighty Food Co. features a light, bright setting to enjoy dining with family, friends, date night, and small groups.
