Elm & Good Opens in Deep Ellum on August 12

Elm & Good, the modern American tavern inspired by no-fuss farmhouse fare opens in Deep Ellum on August 12, with Graham Dodds as Executive Chef and Gregory Huston as Lead Bartender.

The menu at Elm & Good emphasizes clean and bright flavors with grilled meats, seasonal vegetables and seafood prepared by Dodds. Menu highlights include a Garden Charcuterie Board, an ever-changing plant-based version of the traditional charcuterie board with marinated olives and seasonal, pickled vegetables, the Lion’s Mane with trumpet mushroom “chorizo,” beech and maitake mushrooms, and saffron Bomba rice, and Rabbit Agnolotti, with fennel seed dusted rabbit loin, fines herbes and beurre fondue.

For over 15 years, Dodds has led the culinary programs at some of Dallas’ top restaurants and has become a leader in the local dining scene. In his new role, Dodds oversees the culinary program at Elm & Good where the menu is inspired by classic, all-American fare, modernized to align with contemporary trends.

With a large, front-and-center bar, Elm & Good’s beverage program is integral to the dining concept. Cocktails feature a fresh approach to bespoke spirits, tonics, tinctures and bitters, fresh-squeezed juices, proper ice, classy glassware and memorable presentations. Highlights include The Pittman Paloma, with El Jimador, grapefruit, fresco, bittermens, grapefruit bitters and tonic, and The Gypsy Tea Room, with green tea steeped rum, lemon juice, honey syrup and muddled blackberries. Beyond cocktails and spirits, guests can enjoy a rotating selection of regional and craft brews alongside a curated menu of celebrated American and international wines.

Since moving to Dallas in 2014, Gregory Huston has helped craft beverage programs at numerous local favorites such as Grange Hall and Bowen House. In his new role, Huston oversees the beverage program at Elm & Good where he is in charge of creating the bar menu, managing the bar layout and flow, training staff and creating training manuals.

The 5,525 square foot restaurant offers a handsome, contemporary atmosphere that couples rustic elements with a timeless, industrial aesthetic. The space features white walls with dark beams and columns, paired with high ceilings complemented by one-of-a-kind fixtures, aglow with warm lighting. Wood tables are hand-hewn, and banquettes wrapped in rich leather. The expansive floor plan is broken into varied seating areas, creating pockets of intimacy in an otherwise airy space. The spirited bar serves as the core where guests can expect an enthusiastic atmosphere, fueled by a bustling and lively energy.
