Double Take, a modern American restaurant located minutes from the heart of Beverly Hills, has appointed Paul Gregory as its new Executive Chef. In his new role, Gregory leads the kitchen at Double Take and oversees the culinary program for Hotel Palomar Los Angeles – Beverly Hills ensuring quality and consistency from start to finish.

Gregory brings over 20 years of experience in hotel food & beverage operations, most recently as Executive Chef at The Westin South Coast Plaza Hotel in Costa Mesa, Calif. Prior to, he served as Food & Beverage Director at The Westin Los Angeles Airport. His immense experience leading high-volume kitchens in Southern California hotels also includes executive and banquet chef roles with Sheraton Gateway Los Angeles Hotel, the former Century Plaza Hotel & Tower (Century City, Calif.), Manhattan Country Club (Manhattan Beach, Calif.) and the former Wyndham Bel Age Hotel (West Hollywood, Calif.). Gregory plans to update the menu with additions including Spaghetti Squash Mushroom Bolognese, an Ahi Tuna Sandwich with wasabi-dressed Asian vegetables on a Hawaiian roll, and Filet Mignon atop balsamic caramelized onion, asparagus, smashed potatoes and crispy leek.

“Paul was the clear choice for our executive chef position,” says Double Take Restaurant General Manager Nilson Silva. “With his decades of food and beverage experience in Southern California we know he will take our culinary program to the next level.”

Inspired by a Hollywood backlot, Double Take mirrors the hotel’s independent film industry-inspired design and is comprised of three interconnected spaces: a lounge/bar, dining room and state-of-the-art game room with a pool table, shuffleboard, Skee-Ball, dual 4k Ultra HD TVs, video games, darts and board games; the multi-functional space can easily be sectioned off for private events of all sizes. Double Take is located at 10740 Wilshire Blvd, Los Angeles, CA 90024. The restaurant is open for brunch daily 6:30AM – 2PM and 4:30PM – 11PM for dinner service.
