Located on The Source Hotel’s expansive rooftop, The Woods is primed to become an essential dining destination in Denver; especially with the appointment of Brandon Biederman as the restaurant’s Executive Chef. Biederman’s Mile High City cuisine credentials are extensive, with recent positions at Ace Eat Serve and Steubens Food Service. The hotel and restaurant are slated to open in early summer 2018.
“I’m thrilled to join the team at The Source Hotel,” Biederman says. “I am excited for The Woods to open as a neighborhood hangout—a place that Denverites visit on the way home from work, mixing and mingling with guests. We bring a lot to the table with the amazing view, New Belgium’s adventurous beers, and the diverse menu.” With a privileged position on the eighth-floor rooftop, Biederman is eager to call The Woods’ panoramic views of the mountains and Denver skyline, his office.
Offering breakfast, lunch, dinner and cocktails with ingredients sourced from their very own rooftop garden (and brunch soon to come), The Woods is a full-service restaurant, bar and beer garden. The approachable menu will feature innovative spins on American classics, from pizza to burgers to steaks, often using New Belgium’s offerings—brewed onsite—as inspiration. Similar to the cocktail menu, Biederman also plans to take advantage of The Source Hotel’s living garden, using the freshest herbs to accent and enhance his dishes. Biederman’s touch will also be seen in in-room offerings including bento style boxes to-go, and onsite catering menus for weddings and events.
