Award-winning Lincoln Square cocktail bar, The Sixth of The Fifty/50 Restaurant Group, officially announces new Lead Bartender, Dylan Seo, as well as a list of new cocktails to accompany the transformation of this neighborhood hangout.

Upon taking this new leadership role, Seo is passionate about maintaining The Sixth’s presence as a neighborhood favorite for both the community as well as visitors and aims to make The Sixth a destination spot for all cocktail enthusiasts. Since opening, The Sixth has been a leader of Chicago’s cocktail culture, and Seo continues the charge with an incredible amount of thought placed into both the cocktails and the experience offered.  With experimental cocktails, stellar presentation and the use of unique flavors and ingredients, Seo is excited to show guests his version of The Sixth which brings a new element of whimsy and nostalgia.

Throughout his career, Seo has had the opportunity to act as a mad scientist and old-school apothecary all while creating drinks that guests can enjoy. He constantly pushes himself to use various ingredients and garnishes to construct creative cocktails, while also being mindful of purpose and reusing elements when possible. Seo has worked with professionals across the country, from distillers to farmers, to create drinks that are sentimental, while also being transformative. Prior to The Sixth, Seo held positions at other Chicago destinations including The Pump Room (now Booth One) and The Dawson.

Under Seo’s direction, the new cocktail menu brings childhood memories to life with titles and flavors from the past. This theme creates a sense of home through the sips offered to guests.  Presentations show off bright colors, vibrant garnishes and show stopping glassware.  Standouts bringing a sense of playfulness to the menu include Mr. Frog (Waterloo No. 9 Gin, Triple Sec, Ancho Reyes, Avocado and Grapefruit), *Ants on a Log* (Rye, C&K Immature Brandy, Persimmons and Jasmine Honey), and Purple Panda (Aquavit, Sloe Gin, Cocchi Rosa, Beets, Tarragon and Pineapple Kombucha Gummy Bears).

A selection of “Stirred Cocktails” offer rich melding flavors like the He Who Travels (Hanjozo Sake, Genepy, Fino Sherry, Cucumber, Serenity) and “Crush Cocktails” make for easy sipping like the Coconut’s Funky Passion (White Rum, Coconut, Spiced Pear, Passionfruit, Allspice).

The Sixth also expands its food offerings, now boasting a wider selection of snacks to accompany drinks.  Highlights include the beloved Duck-Fat Frites as well as Pickled Vegetables, Housemade Buratta and Ricotta, Bruschetta, Sandwich Jacques de Molay and more.
