A Virginia Beach icon since 1927, the Cavalier Hotel is about to reopen following a $75 million restoration, which will include three exciting new dining destinations. Today, the Cavalier announced the appointment of Dan Elinan as the hotel’s Executive Chef.
Elinan will be responsible for the culinary direction of all food and beverage outlets for the hotel including restaurants Becca, the Hunt Room, and the Raleigh Room. With an extensive fine-dining background from around the world, Chef Elinan will oversee all three restaurants holistically, from creating the menus to hiring and supervising kitchen staff. Elinan will also oversee all banquets and catering for the Cavalier, upholding the hotel’s legacy of weddings and events.
“Chef Elinan’s exceptional culinary expertise, creativity, and leadership skills will be a great asset to the Cavalier,” says Cherie Davis, the Cavalier’s managing director. “Under Chef Elinan’s direction, each of the three restaurants will provide a unique and exciting dining experience for Virginia Beach locals and visitors. We are thrilled to have him guide The Cavalier’s culinary team and look forward to an exciting future.”
Chef Elinan was most recently executive chef at the Hilton Virginia Beach Oceanfront, which included overseeing popular restaurants Catch 31 and Salacia. Previous to that, he worked at the Omni Shoreham in Washington D.C., overseeing four contemporary American cuisine outlets. Throughout his esteemed career, which extends well beyond his previous two posts, Chef Elinan has worked under three Michelin Star-rated chefs and has been a guest chef at the prestigious James Beard House in New York City. He attended the Culinary Institute of American in Hyde Park, New York.
“My role as the executive chef will allow me and my brigade the opportunity to represent our Virginia Beach community with the culinary excellence that the Cavalier has been providing for almost a century, while working with our local bounty as intimately as possible,” says Elinan. “I’m honored to be a part of its future and have a great respect for its past.”
In addition to three exciting restaurants, the Cavalier will house Tarnished Truth Distillery and offer guests a tasting room, distillery tours, and the opportunity to create and distill their own barrels. Guests can also purchase the Cavalier’s signature bourbon, gin, and vodka, all made on–site.
