Carmel Mission Inn Names Fabian Di Paolo Executive Chef

Carmel Mission Inn, a boutique hotel property located in the coastal community of Carmel, CA has named award-winning, globally trained culinarian Fabian Di Paolo as the property’s new executive chef, overseeing all food and beverage programming for the hotel including at its signature restaurant Shearwater Tavern. Chef Di Paolo brings over 17 years of executive level culinary leadership experience, honed at many of the east coast’s most notable hotels and resorts to the property, which celebrated the opening of Shearwater in 2021.

Most recently, Chef Di Paolo served as executive chef for Esme Miami Beach, where he lent his unique talent for new-style Latin American flavors to the boutique hotel’s buzzing food and beverage operation, overseeing culinary programming for three outlets. Prior to Esme, he helmed the kitchen at CVLTVRA, another Miami culinary hotspot known for top quality international cuisine. At CVLTVRA, Di Paolo worked alongside restaurant consultants Big Time Design to concept the new restaurant including interiors, programming, and menu development, and during his tenure, the restaurant was named of the city’s 50 best restaurants.

Di Paolo also previously served as executive chef at the Four Star, Five Diamond Trump International Beach Resort, in Sunny Isles, Florida, where he played an integral role in developing the first Porsche Design Tower featuring a private kitchen to service condominium owners, including planning kitchen design layout, and concepting rotating seasonal menus. Additional prominent positions include executive chef roles at Bice Bistro, Cardozo Hotel and Carlyle Cafe by Bice at Miami Beach’s Victor Hotel and The Tides South Beach and Viceroy Icon Brickell. He holds a pastry chef certification and has previously served as an award-winning executive pastry chef. Chef Di Paolo trained at Institute of Professional Gastronomy Mausi Sebess and Le Cordon Bleu in Buenos Aires, Argentina, and New York’s Le Cordon Bleu, and is fluent in English, Spanish, and Italian.

Di Paolo will bring his own unique flair to Carmel Mission Inn, and Shearwater Tavern, which features a menu of approachable, contemporary California-style fare highlighting locally grown ingredients showcased in a variety of small and large plates.
