Bryan Brown Appointed Executive Chef of Michael Mina's Bourbon Steak

The AAA Five Diamond beachside getaway, Monarch Beach Resort announced the appointment of Bryan Brown as Executive Chef of BOURBON STEAK, the property’s new signature restaurant from James Beard award-winning Chef Michael Mina opening late February 2018.

A culinary professional with more than 10 years of experience, Brown will lead the opening of the new restaurant, lead the development behind the restaurant’s menus, oversee operational procedures and event planning of Michael Mina’s modern American steakhouse while continuing to uphold the James Beard award winning chef’s philosophy of constructing bold yet balanced flavors. Brown’s background in classical and contemporary cooking styles make him well-suited to lead the team behind Michael Mina’s first BOURBON STEAK in Orange County.

Brown most recently served as Executive Chef at Bottega Louie, a restaurant, gourmet market, patisserie and café in downtown Los Angeles where he oversaw a staff of more than 40 culinary professionals while managing the food production and back of house operations. Prior to this role, he was Executive Chef at Vintana Wine + Dine in Escondido where he developed menus, hired and led a staff of more than 30 and mentored chefs and cooks.

BOURBON STEAK is known for its modern, seasonal take on the classic steakhouse, a timeless dining experience with a twist and cutting-edge beverage program. Luxurious cuts of prime meat will be cooked in Chef Mina’s signature style, first poached in butter, and then finished on the grill. Ingredients will be sourced from local farmers and purveyors, highlighting the best of the region.
