Sable Kitchen & Bar has announced Lawrence Letrero as the new executive chef.

A Windsor, Ontario, native, Letrero moved to Chicago to study culinary arts at Kendall College. Upon graduation in 2006, Letrero joined the opening team at Perennial Virant where he sharpened his skills alongside Michelin Star chef and owner, Paul Virant, and later staged at New York’s three-Michelin Star restaurant, Per Se. In the following years, Letrero developed a strong appreciation for the bounty of the Midwest as chef de cuisine at Chicago’s first all vegan fine-dining restaurant, Karyn’s On Green, and eventually helped open River North’s Untitled to critical acclaim as executive sous chef. In 2014, Letrero joined Sable Kitchen & Bar as executive sous chef where he worked alongside former executive chef Heather Terhune to craft globally inspired cuisine with a focus on local, seasonal ingredients. The current menu at Sable reflects Lawrence’s touches. His passion for cooking involves creating menus that are approachable and fun yet refined and technique driven.
