Restaurant Incubator Accepting Applications for Second Class of Chefs


Smallman Galley, the country’s first restaurant incubator, will be accepting applications for its second class of chefs on October 1. Interested candidates can apply via the Smallman Galley website. The application portal will remain open until December 31.

The Pittsburgh-based restaurant concept testing-ground and groundbreaking bar program has been attracting international attention, national media acclaim, and thousands of diners across Western Pennsylvania since opening its doors in December 2015. 

Smallman Galley boasts four up-and-coming chefs running their own independent kitchens and testing out their individual restaurant concepts. During their year tenure, the Chefs will hone their culinary talents six days a week for the dining public, while acquiring the business skills necessary for commercial success at the end of their tenures: training modules accessible to the chefs include financial management and accounting, fundraising, staffing, branding, marketing, and leasing.

CBRE, the world’s largest commercial real estate firm, is an exclusive Smallman Galley partner and will assist the chefs in finding a stand-alone restaurant site during their final months in the program.

Smallman Galley co-founder Ben Mantica says interest and inquiries are already running high among potential chefs and restaurateurs across the country.

Smallman Galley is located at 54 21st Street in Pittsburgh’s Strip District neighborhood and features a 6,000 square-feet renovated space with a central bar area and seating for 200 patrons.
