Dallas-based Pastry Chef Nicolas Blouin, of Rosewood Mansion at Turtle Creek, won top honors at the North American edition of the world’s most competitive chocolatier competition, C3 [Chocolate Chef Competition], at the International Chefs Congress in New York City.

An Iron Chef meets Bocuse d’Or-style competition held by StarChefs and Valrhona Chocolate, Cis the most aggressive competition in chocolate dessert making in the world. Next October, Chef Nicolas Blouin will go on to represent North America at the international standoff between Europe, Asia, and other continents’ Cchampions at the international finals in Brooklyn, New York.

Chef Nicolas Blouin took home top prize for his Fleur d’Asie bonbons [chocolate bon bons, mandarin jelly, black tea ganache, sesame tuile] and plated dessert, which featured jasmine raspberry sorbet stuffed inside a brownie with raspberry compote, Illanka chocolate cream, and Illanka Jasmine foam. The entire dessert in encased in an edible sugar orb.
