C.B. & Potts recently opened its ninth Colorado location at the renovated Foothills Mall in Fort Collins. The 7,800-square-foot restaurant and taproom is located on the west lawn near the main entrance of the center, in front of H&M and Macy’s at 195 East Foothills Parkway. The building features two impressive levels, including an upstairs dining room that overlooks the lower main dining and bar area, as well as an outdoor upper deck, complete with fireplace and full bar. Guests can enjoy the outdoor Potts Peak Patio with their favorite menu selections and a frosty handcrafted Potts beer, while soaking in the sun or watching it dip behind the majestic Rocky Mountains.

“C.B. & Potts is the perfect dining spot, a great place for happy hour or late night fun and a sports fan’s dream, featuring state-of-the-art TVs throughout the restaurant and lounge,” says Jeff Iverson, president of The RAM Restaurant Group, owners of C.B. & Potts. “The building’s décor celebrates Colorado State University and the Fort Collins community, which makes it a great home for CSU Athletics, including boosters, fans and coaches.” C.B. & Potts is an iconic Colorado brand with the first restaurant opening in Fort Collins in 1974 and now operating three locations in the community.

C.B. & Potts hosted a pre-opening party for local leaders and Colorado State University dignitaries. Guests attending the event were encouraged to bring non-perishable food items for the Larimer County Food Bank. Several hundred pounds of food were collected in addition to monetary donations to help the organization continue to provide food to all in need throughout Larimer County.

Known for its legendary burgers, C.B. & Potts is proud to serve 100 percent fresh USDA natural beef with no additives, preservatives, or fillers. Other guest favorites include grilled melts and sandwiches, Potts Mac & Cheese, House Hefeweizen Beer Battered Fish & Chips, crisp and fresh entree salads, and grilled wild Alaskan salmon. House specialties include the Bacon-wrapped Colorado bison meatloaf and Colorado bison short-ribs. When it comes to beer, C.B. & Potts has been brewing their own for over 20 years and proudly pours a variety of fresh and local medal-winning flagship and rotating seasonal selections. Guests can also enjoy great varieties of wine, their favorite cocktail or order from C.B. & Potts creative specialty cocktail menu.

In 2014, the company initiated an Employees Stock Option Plan (ESOP), where vested team members are owners of the restaurant group. Iverson adds, “Our team members own the restaurants and take great pride in serving their guests great food, crafted with the freshest locally sourced ingredients.”

C.B. & Potts Foothills Parkway is open daily for lunch, happy hour, dinner, and late night fun.
